Pop Ups

The idea of a new restaurant, perhaps with a niche will create a buzz; couple that with the idea that it’s temporary and therefore only here for a limited period of time suddenly makes it irresistible.  Everyone has to go and check it out and suddenly the buzz becomes a frenzy.

Unfortunately trendy pop ups will have crowds and therefore really long queues, no one wants to go to a pop up that hasn’t even managed to stir interest, right?  Suddenly you’ll see tons of reviews from foodies all hitting the same place at once.  But what’s the point of reading reviews on a place you won’t even get around to visiting as they’ll be closing shop?

I find what makes a successful pop up is not how long the initial hype is, nor how long the queues are but if it comes back.  A pop up that did well will always make another appearance soon and that’s when it’s worth reading to find out which pop up will be worth queuing up for.
